I know we have all heard it before "healthy holiday recipes to BEAT the weight gain" or "enjoy the holidays with THESE 3 FAT BLASTING foods" WELL - honestly- yes, these recipes I put together are ONE MILLION times healthier than most on Pinterest.. Google.. or I hate to say it, but Grandma's classic cook book.
HOWEVER- I'm a human too and yeah I love kale and eat chia seeds daily but do I love a warm creamy dip with slices of french bread instead of cucumbers..... DOY!
This dip is awesome for a few reasons;
1. It is good hot OR cold- so you can bring it to friendsgiving, or any holiday gathering and serve chilled, but ALSO (preference mhmm) sprinkled with a bit of parmesan and places in the oven for a few to heat it up
2. It won't make you bloat out with a ton of dairy (I make a totally non dairy option)
3. Cannelloni (white beans) are rich in B vitamins which are great for heart health
4. IT'S EASY! I had half of the ingredients in my spice cabinet already, got the rest at Trader Joe's, threw them in my hand held blender and VOIALA! DIP!
NEED AND DO
All of these ingredients (minus the spinach) and blend them in blender- add thawed (lightly) cooked spinach and ENJOY with toasted garlic bread, carrots, celery, tomato, a spoooooon perhaps.
Baked White Bean/Spin-Art/Garlic Dip (Dairy free options) Double ingredients for large group of 5+
1 small shallot, finely chopped
2 large cloves garlic, finely chopped
1 15-ounce can of cannelini beans, drained and rinsed
2 tablespoons low-fat greek yogurt (I USE VEGANNAISE)
1 tablespoon lemon juice
2 teaspoons packed fresh oregano
1½ tablespoons plus 1 teaspoon extra virgin olive oil, divided
1½ tablespoons water
⅛ teaspoon cayenne
Salt & pepper, to taste
1 12-ounce jar of marinated artichokes, drained
1/2 cup frozen (thawed) spinach
3 tablespoons freshly grated parmesan cheese (for sprinkling on top!)(For DAIRY FREE- Sprinkle Nutritional Yeast, still has the cheesy flavor)
